I guess it is safe to say that COVID-19 has our creative juices flowing!? It all started earlier in the season when we noticed the Cobb garden was going crazy.

Equal parts sunshine, water, and employees working from home (ha!) had the harvest plentiful this year. At one point over three days, I picked over 20 Cucumbers, you may have seen this social media post.

We had quite a few responses asking what we were going to make with all of our cucumbers, so we thought if you’re having Coffee with Cobb (check out our webinar archives here) why not cook with us too?! We went with a simple (but delicious) cucumber salad that is a summertime staple. I realize there isn’t any actual cooking involved with this recipe- it’s mostly chopping and chilling but hey, you never know what could be next 😉
